PREPARATION
Heat 1 tablespoon olive oil in a large skillet over medium heat and brown chicken, turning once. Remove chicken and keep warm.
Heat 1 tablespoon olive oil over medium heat and cook onion, stirring occasionally, until golden, about 8 minutes. Stir in milk, cream and Knorr® Carbonara sauce mix and bring to a boil. Return chicken to skillet. Reduce heat and simmer until chicken is thoroughly cooked, about 3 minutes.
Meanwhile, arrange bread on baking sheet. Brush with remaining 2 tablespoons olive oil. Toast until golden. Rub with garlic then spread with cheese.
To serve, arrange chicken over onions and sauce. Sprinkle with walnuts and additional cheese. Serve with croutons.
