SPINACH SEAFOOD LASAGNA

INGREDIENTS
1 package Knorr® Cream of Spinach recipe mix
3 cups milk
1 Tbsp. olive oil
1 large onion, thinly sliced
8 ounces shiitake or white mushrooms, thinly sliced
1 lb. uncooked medium shrimp, peeled, deveined and chopped and/or bay scallops
2 cloves garlic, finely chopped
12 lasagna noodles, cooked and drained
2 cups shredded mozzarella cheese (about 8 oz.)
PREPARATION

Preheat oven to 350°. Combine Knorr® Cream of Spinach recipe mix and milk in medium saucepan and bring to a boil. Reduce heat and simmer, stirring occasionally, until thickened, about 2 minutes.

Heat olive oil in large nonstick skillet over medium-high heat and cook onion and mushrooms, stirring occasionally, until beginning to brown, about 6 minutes. Add shrimp and garlic and cook, stirring occasionally, until shrimp turn pink, about 4 minutes.

Spread 3/4 cup spinach mixture in 13 x 9-inch baking dish. Layer 4 lasagna noodle, then top with 1/2 of the shrimp mixture, 3/4 cups spinach mixture and 1/3 of the cheese; repeat layers, ending with noodles. Top with remaining spinach mixture.

Bake covered for 40 minutes. Top with remaining cheese and bake uncovered for 10 minutes or until cheese is melted. Serve with grated Parmesan cheese.
