INGREDIENTS

2 cups water 2 Knorr® Vegetarian Vegetable Bouillon Cubes, crumbled 2 cups bulgur wheat (cracked wheat) 1/4 cup olive oil 3 Tbsp. lemon juice 1 Tbsp. red wine vinegar 1 clove garlic, finely chopped 1/2 tsp. ground black pepper 1 cup cucumber, finely chopped 1 cup tomato, finely chopped 1/2 cup red onion, finely chopped 1/2 cup finely chopped fresh parsley 2 Tbsp. finely chopped fresh mint or 1 Tbsp. dried mint flakes 1/2 cup crumbled feta cheese (about 2 oz.)

PREPARATION
Bring water and Knorr® Vegetarian Vegetable Bouillon Cubes to a boil in 2-quart saucepan. Stir in bulgur wheat and remove from heat. Cover and let stand for about 30 minutes; cool to room temperature.
Meanwhile, combine olive oil and next 4 ingredients in medium bowl. Add cooled bulgar wheat and remaining ingredients except cheese; toss to coat. Fold in cheese.
