PREPARATION
Preheat oven to 375°. Spray 13 x 9-inch baking dish with nonstick cooking spray; set aside.
Blend Knorr® White sauce mix and milk in 1-quart saucepan with wire whisk or fork. Bring to a boil over medium-high heat, stirring constantly. Reduce heat to low and simmer, stirring occasionally, 1 minute. Stir in cheese until melted and smooth; set aside.
Combine turkey, corn and salsa in medium bowl, then stir in 1 cup cheese sauce.
Spoon 1/2 cup turkey mixture down center of each tortilla, then roll up and place seam-side-down in prepared baking dish. Spread remaining cheese sauce over enchiladas, then sprinkle with olives.
Bake uncovered 20 minutes or until heated through. Serve, if desired, with additional salsa, shredded cheese and sour cream.
