INGREDIENTS
2 cups water
1 package Knorr® Vegetable recipe mix
1 can (14-1/2 oz.) whole or diced tomatoes, undrained
2 Tbsp. chopped fresh cilantro
1 small cucumber, peeled, seeded and chopped
1/2 cup chopped green bell pepper
1/8 tsp. hot pepper sauce
1 to 2 Tbsp. lime juice
1/2 tsp. ground cumin
Salt and pepper to taste
Seasoned croutons (optional)
PREPARATION

Let's go South of the border...

Bring water and Knorr® Vegetable recipe mix to a boil in a small saucepan. Reduce heat and simmer for 2 minutes.

Combine soup, tomatoes and cilantro and process in a blender or food processor in batches until smooth. Stir in remaining ingredients except croutons. Chill until completely cool. Serve with croutons, chopped fresh cilantro and a dollop of sour cream. Everyone will say olé, we promise.
