PREPARATION
Heat 1 tablespoon olive oil in large nonstick skillet over medium-high heat and brown chicken, about 3 minutes, stirring frequently. Remove chicken from skillet and keep warm.
Combine water, remaining 4 tablespoons olive oil and KnorrĀ® Creamy Pesto sauce mix in small bowl or measuring cup. Pour mixture into skillet and bring to a boil over medium-high heat. Reduce heat and simmer about 4 minutes, stirring occasionally. Stir in artichoke hearts. Return chicken to skillet and cook about 2 minutes or until chicken is thoroughly cooked. Serve over hot cooked pasta.
*Also delicious with 1 lb. large shrimp, peeled and deveined.
