CHICKEN RICE GUMBO

1-1/2 lbs. boneless, skinless chicken thighs, cut into bite-size pieces 1 tsp. Knorr® Reduced Sodium Chicken flavor Bouillon 2 Tbsp. Country Crock® Spread, divided 1 medium onion, chopped 1 green bell pepper, chopped 1 ounce cut-up ham 1 cup regular or converted rice 2 cloves garlic, chopped 4 cups water 1-1/2 cups Ragu® Old World Style® Pasta Sauce 1/4 cup pitted ripe olives, sliced

PREPARATION
Toss chicken with Knorr® Reduced Sodium Chicken flavor Bouillon. Melt 1 tablespoon Country Crock® Spread in deep 12-inch nonstick skillet over medium-high heat and cook chicken, in batches, stirring frequently, until almost cooked through, about 4 minutes. Remove chicken from skillet and set aside.
Melt remaining 1 tablespoon Spread in same skillet over medium-high heat and cook onion, green pepper and ham, stirring frequently, until golden, about 6 minutes. Stir in rice and cook, stirring frequently, until golden, 2 minutes. Stir in garlic and cook 30 seconds. Add water and bring to a boil over high heat. Reduce heat to low and simmer covered, until rice is tender, about 20 minutes.
Stir in Pasta Sauce, chicken and olives and simmer uncovered until chicken is thoroughly cooked, about 5 minutes. Garnish, if desired, with lime wedges and chopped cilantro.
