PINEAPPLE RICE

INGREDIENTS
2 Tbsp. vegetable oil
1/2 small onion, chopped
1 cup uncooked regular or converted rice
2 cans (8 oz. ea.) pineapple chunks in natural juice, drained and halved (reserve juice)
1-1/2 Tbsp. KnorrĀ® Chicken flavor Bouillon*
PREPARATION

Heat oil in 12-inch nonstick skillet over medium-high heat and cook onion and rice, stirring frequently, 3 minutes or until rice is golden brown. Add reserved pineapple juice and enough water to equal 2 cups. Stir in KnorrĀ® Chicken flavor Bouillon and bring to a boil over high heat. Reduce heat to low and simmer covered 10 minutes. Stir in pineapple and cook 10 minutes or until rice is tender.

*SUBSTITUTION: Use 2 Tbsp. Knorr Reduced Sodium Chicken flavor Bouillon instead of Knorr Chicken flavor Bouillon.
