PICKLED RED ONIONS & JALAPENOS

INGREDIENTS
2 medium red onions (about 1-1/2 lbs.), very thinly sliced (about 6 cups)
3 jalapeno peppers, thinly sliced
4 to 5 cups boiling water
1/2 cup apple cider vinegar
1/2 cup water
3 Tbsp. sugar
1 tsp. whole peppercorns
1 KnorrĀ® Chipotle MiniCube, crumbled
1 KnorrĀ® Cilantro MiniCube, crumbled
PREPARATION

Combine onions with jalapeno peppers in a large bowl. Pour in boiling water to cover onion mixture. Let stand 5 minutes; drain. Stir in remaining ingredients. Let stand 10 minutes. Cover and refrigerate covered 1 hour or until ready to serve.

Tip: Best if made ahead, flavor develops over time.
